El Cedro Semiwashed is a specialty coffee from Colombia, grown by Servio Tulio and his wife Nelcy Yohana on their farm in the Magdalena River valley at over 1800 meters. The coffee is processed using a semi-washed method, combining washed and unwashed techniques, with fermentation in sealed barrels for 48 hours and drying on air-flow canopy beds for 18-24 days. It offers a sweet cup with notes of fig and maple syrup, complemented by bright acidity of berries, mango, and white peach. Suitable for both filter and espresso.
