Cherry Co-fermented Castillo
Summary
Cherry Co-fermented Castillo from Los Patios in La Plata, Huila, Colombia. Local producers depulp cherries after a 12-hour aerobic fermentation, then a cherry concentrate and proprietary solution are added at Los Patios for a two-day absorption and fermentation phase before patio drying for 12–16 days. The cup is dominated by intense cherry and ripe red fruit, with a candy-sweet body, soft vanilla undertone, and gentle, low acidity leading to a clean, fruit-forward finish. This Castillo variety coffee is roasted as an omniroast, suitable for both filter and espresso preparation.
