Red Honey Kurume & Dega
Summary
This Ethiopian coffee comes from the Konga Washing Station in the Gedeo zone of Yirgacheffe, at 2,000 meters above sea level. Over 400 smallholder farmers deliver cherry from the surrounding kebeles, and the lots are separated by processing method and quality. The varietals are Kurume and Dega, local landraces from southern Ethiopia. Processed as Red Honey: cherries are selected at >20° Brix, undergo 24 hours of aerobic and 24 hours of anaerobic fermentation, then depulped and dried on shaded raised beds for 15 days. The cup offers cantaloupe melon and dried florals on the nose, ripe stone fruit, syrupy sweetness, and a soft, rounded acidity with a honeyed finish. Roasted as an omniroast for versatility across brewing methods.
