Cherry Co-fermented
Summary
A Colombian blend from Tolima, Huila and Caldas, processed at El Vergel Estate as part of the Forest Coffee initiative. Made from Caturra and Colombia varieties grown at 1,750 m in Huila. The cherries undergo 48 hours of anaerobic pre-fermentation, then co-fermentation with yeast, coffee cherry aromas and cane sugar for 5 days after pulping, followed by sun pre-drying, silo drying and 30 days of resting. The cup is complex and balanced with pronounced sweetness and fruity notes of cola, cherry and vanilla.
