Shakiso Gigesa, Ethiopia
Summary
Shakiso Gigesa comes from the Danbi Uddo Kebele, just outside the town of Shakiso in Ethiopia's Guji Zone. The coffee is grown by more than 500 smallholder farmers on small family-run plots at altitudes of 1,800–2,100 metres, using local heirloom varieties. Cherries are depulped and fermented for 36–48 hours, with the water changed after 24 hours, then washed in channels and dried on raised African beds for around 10–21 days. A washed Ethiopian coffee with notes of blueberry, grape and Earl Grey, suited to filter brewing.
