Costa Rica Los Reyes
Summary
This coffee comes from the Los Reyes farm in the Los Reyes de Dota area of Costa Rica, at an altitude of 1450 meters above sea level. The cherries are hand-picked at optimal ripeness starting in December. The coffee is processed using the Rested Lactic Natural method: on the day of harvest, cherries are placed in sealed bags for a 12-hour fermentation, then dried on African beds for 26 days until reaching 11% moisture. After that, the coffee is placed in sealed bags for another 3 days to promote a second lactic fermentation, enhancing sensory complexity. Finally, the coffee rests for two months to stabilize its flavor profile. The cup profile features strawberry yogurt, raisins, and pecan nuts.
