This coffee from Colombia's Bruselas region was produced by Nestor Lasso and his brother Adrian at Finca El Diviso. The rare Ombligón variety was processed using an advanced natural method: ripe cherries were oxidized in mosto for 48 hours, thermal shocked, and fermented anaerobically for 38 hours with brewer's yeast before being dried to 18% moisture, stabilized, and finished to 11% moisture.
