
Colombia Nestor Lasso Ombligon
Summary
This coffee from Colombia's Bruselas region was produced by Nestor Lasso and his brother Adrian at Finca El Diviso. The rare Ombligón variety was processed using an advanced natural method: ripe cherries were oxidized in mosto for 48 hours, thermal shocked, and fermented anaerobically for 38 hours with brewer's yeast before being dried to 18% moisture, stabilized, and finished to 11% moisture. The cup is fruit-forward with notes of watermelon Jolly Rancher, peach, and white sugar.
