Summary
A Colombia Geisha coffee from Finca El Paraíso, processed using a double anaerobic fermentation method. Cherries are harvested over-ripe, sanitized with ozone, submerged in water for 48 hours, then pulped and fermented with Lactobacillus for 24 hours, followed by a thermal shock treatment and rapid drying. The cup offers complex aromas of Muscat grapes, bergamot, pear, sake, Concord grape, ginger blossom, pistachio, and lychee, with soaring acidity, juicy sweetness, and a lush, lingering mouthfeel.
