Costa Rica, Minor Jimenez Abarca - Single Origin Filter
Summary
Single origin natural coffee from Finca La Esmeralda in Tarrazu, Costa Rica, grown at 1650 MASL by Minor Jimenez Abarca and Nancy Gaitan Cruz. The Abarca family has farmed here for three generations and now processes its own coffee at La Cumbre micromill in San Gabriel de Tarrazu. This lot combines Catuai and Caturra varieties; cherries rest overnight in receiving tanks before drying whole in the sun on patios for 30 to 40 days with regular turning. In the cup it is sweet and rounded with apple, peach, baked biscuit and a lingering honey finish, and a soft, confectionery-like mouthfeel reminiscent of nougat.
