Wilton Benitez / Colombia / Advanced Natural / Tabi
Summary
This Tabi coffee comes from producer Wilton Benitez at Granja Paraíso 92 (Finca El Paraíso-92) in Piendamó, Cauca, Colombia, grown at 1,900-1,950 metres above sea level and sourced through direct trade. Tabi is a Cenicafé-developed hybrid of Timor, Bourbon and Typica, bred for leaf rust resistance while retaining the sensory quality of traditional varieties. The lot is processed as an anaerobic natural with thermal shock: whole cherries are sterilised with ozone and UV, given a 90°C thermal shock, then fermented for 62 hours at 20°C with Saflager S-23 yeast before drying for 88 hours at 40°C. Expect a structured, complex cup with notes of orange candy, wild strawberry, lemon cake and guava.
