Summary
Anhydrobiosis is an experimental coffee from Ethiopia's Yirgacheffe region (Sidama). Sourced from the Halo washing station through Abenezer at Origin Lands Coffee. Processed using the washed method with raised-bed drying and grown at 2100 MASL. The same coffee lot was prepared with two different moisture content levels (9% standard and 13% rehydrated) to explore the effects of humidity on green coffee. The 9% version features delicate notes of peach, white tea, and lime with a silky mouthfeel, while the 13% rehydrated version offers plum, raw sugar, sweet tea, and sweet lemon with more complexity. Dark roast level. Cupping score of 87.
