Etiopie Banko Gotiti
Summary
Ethiopian washed filter coffee from the Banko Gotiti station in Gedeb, near Yirgacheffe, grown by hundreds of smallholder farmers on deep red soil at 1900-2300 m. Heirloom varieties, fully washed: cherries are pulped within eight hours of picking, fermented in water for 36-48 hours, washed in channels with running water and dried about a week on raised beds under shade netting. Floral and tea-like, with bergamot, lemon grass, jasmine tea, black tea and gentle honey sweetness, bright sparkling acidity and a light body; it opens up and becomes more readable as it cools.
