Summary
A single-origin coffee from the Las Flores farm in Huila, Colombia, produced by the Vergara family. This Pink Bourbon varietal is processed using a thermo shock washed method: after picking, the cherries are floated, washed, and oxidized for 24 hours, then depulped and fermented with mucilage for 36 hours, followed by a thermal shock with hot water at 50°C, and finally dried for 8 to 15 days. The cup is floral with notes of mandarin sorbet and yuzu, known for high sweetness and a silky body.
