A washed Pink Bourbon from Linarco Rodriguez's family farm in Palestina, Huila, Colombia. The farm has been passed down through three generations for almost 60 years and is shared between seven siblings. Ripe cherries are floated, pulped, and fermented in open-air tanks for 48 hours at around 15°C, then washed and dried in parchment over 25 days. In the cup, expect floral aromatics, soft apricot sweetness, and a clean white grape finish. Bright, elegant, and expressive.
