Colombia Betania
Summary
Single-origin Colombian coffee from Finca Betania, located in Palestina, Huila, at 1,740–1,840 masl. Produced by third-generation farmer Doña María Rodríguez, whose five-hectare farm keeps three hectares under coffee shaded by guamo, cachimbo, orange and avocado trees, plus one hectare of forest reserve. This lot is the Bourbon Chiroso variety, whose elongated cherries give it its name and which may be genetically related to Ethiopian landraces. Fully washed: cherries are pulped, fermented for 48 hours in tanks, then dried slowly in the sun for 19–24 days on covered beds. Silky texture with floral and herbal notes and a balance of citric acidity and sweetness. Tasting notes: fruity, raspberries, white flowers and honey.
