Colombia-the Papayo
Summary
Colombian coffee from Huila, grown by Marlon Rojas at Finca La Reserva at 1720 m.a.s.l. The Papayo variety, named for the papaya-like shape of its cherries, undergoes an anaerobic washed process: ripe cherries oxidize for 48 hours before pulping, then ferment with the fruit for a further 88 hours, are washed and slowly dried over 15 days. In the cup it shows fresh raspberry and tropical fruit with floral notes, balanced acidity and sweetness, a creamy mouthfeel and a long, clean finish.
