Summary
This coffee comes from the Juanachute micromill in the Tarrazú region of Costa Rica. Producer Luis Anastasio Castro, also known as Don Tacho, is a pioneer in Costa Rica's micromill movement. The Villa Sarchi lot underwent a Natural Anaerobic process: 120 hours in sealed barrels followed by 120 hours of open-air fermentation, then dried on sunlit beds for about 40 days and finished in a drying drum. The result is a lively and complex cup with notes of brown sugar, chocolate, mandarin and red wine.
