La Gardenia Marsellesa
Summary
Finca La Gardenia sits at 1,900 metres in the mountains of Huehuetenango, Guatemala, managed by producer Eddy McDonald with a focus on sustainability and quality. This lot is the Marsellesa variety, given a carefully controlled natural process: cherries are harvested at peak ripeness and dried a few hours later, spending five days on patios under the sun before a slow 22-day drying on African beds with constant turning. The cup is sweet and fruity, with notes of vanilla, forest berries and brown sugar over a base of malt and cocoa, a long finish, wine-like acidity and a creamy body. It performs especially well as filter and also as espresso.
