Fes Anaeróbico 120h
Summary
Single-lot Red Bourbon from Finca El Salvador, in the Apaneca-Ilamatepec mountain range of El Salvador, grown at 1450-1640 m and managed by Rodolfo Ruffatti, whose family has owned the farm since 1934. Processed as a 120-hour natural anaerobic fermentation, which intensifies sweetness and builds a deep aromatic profile. In the cup it is intense and juicy, with notes of cola, tamarind and gummy candy over a cocoa base, wine-like acidity, silky body and a long finish.
