The farm is known for its microbiology-driven approach and pioneered the Thermal Shock technique. This lot undergoes a double anaerobic thermal shock washed process using tropical yeast fermentation, followed by thermal shock washing and dehumidifier drying. Aromas of white peach and oolong, with flavours of white peach, brown sugar and milk tea. Recommended for filter brewing.
