The Geisha variety undergoes a meticulous dual-fermentation process: hand-selected ripe cherries are fermented for 48 hours with brewer's yeast and sugars, then waterless pulped and given a second 24-hour hermetic fermentation. The beans are slow-dried at low temperatures and rested for 30 days. The cup is vibrant with notes of jasmine, magnolia, mangosteen, nectar, and white tea.
