Danche Ethiopia - Hydro Honey

Summary

A microlot from Danche Station, SNAP Coffee's base in Gedeb, Yirgacheffe, Ethiopia. Grown by 810 smallholder producers from the villages of Danche and Kubi at approximately 2,100 metres above sea level, where mixed Ethiopian heirloom and landrace varieties grow in semi-forested terrain with fertile red soil. Cherries above 20° Brix were sorted and floated, shade-dried 48 hours, then fermented in barrels smoked with olive-tree wood and honey residue: 48 hours aerobic followed by 48 hours submerged anaerobic, then shade-dried in the cherry for about 25 days. Flavour notes of kiwi, lychee, jackfruit and rum. Light roast for filter.
