Nestled in the misty highlands of Herrera, Tolima, Colombia, this coffee from fifth-generation farmer and Q-Grader Newerley Gutierrez is a Java variety processed using the Honey method. After harvest, cherries undergo 24 hours of oxidation, 48 hours of submerged fermentation in cherry pulp, and 24 hours of post-pulp fermentation, then dried on raised beds at 1700m. The cup offers rich, sweet flavours of panela, pineapple and peach with medium citrus acidity and a heavy body. Roasted for filter brewing.
