Costa Rica Las Lajas Double Diamond from producers Francisca and Oscar Chacon at Las Lajas Micro-Mill in Sabanilla de Alajuela, Central Valley, Costa Rica. Grown from the Centroamericano Arabica variety. Processed using a Special Natural - Funky Naturals method: an anaerobic Diamond Mountain process where only the ripest cherries are fermented in sealed tanks for an average of 72 hours, then slow-dried on covered raised beds. Light roasted, recommended for filter brewing. Flavour notes of Seville orange, malted milk, and bitter orange peel.
