Summary
Single origin coffee from Finca Campos Hermoso in Quindio, Colombia, produced by Edwin Noreña. The Yellow Bourbon variety is grown at 1,650 meters above sea level. Cherries are harvested above 20 brix, soaked in water for 5 hours, undergo an initial cherry carbonic maceration for 96 hours, then a second anaerobic fermentation of 48 hours with 45% mucilage retention and recirculation, and are sun-dried on African beds for 24 days. Roasted to an American (medium) roast. Tasting notes include blackberry, molasses, and lemongrass.
