Colombia El Cedro Maracaturra
Summary
Colombia El Cedro is a washed coffee from the Huila region, produced by Henry Muñoz and Mónica Berdugo on their small two-hectare farm. The variety is Maracaturra, a natural cross between Caturra and Maragogipe. The coffee undergoes a two-stage fermentation process: two days in bags, then two days in mucilage, followed by washing and drying for 20-25 days. Flavour notes include peach, jasmine, and gooseberry, with high acidity and a light, clean, tea-like profile.
