Summary

Single origin Colombian coffee from Finca Betania in Palestina, Huila, produced by Maria Rodriguez, who co-leads the farm with her husband Linarco Rodriguez within a cooperative network of 117 smallholder families. The SL28 variety is grown at 2000 m and processed as a honey lot: ripe cherries are hand picked and sorted, depulped leaving a thin even layer of mucilage on the parchment, then dried slowly on raised beds under controlled conditions to concentrate sugars while preserving clarity. Flavour profile of citrus, pear and brown spice. Roasted for filter.
