Summary

A single-origin Colombian filter coffee from Finca Sicilia in Quimbaya, Quindio, produced by Pedronel Ospina and processed at the Campo Hermoso R&D Centre under Edwin Norena. The Caturra lot combines black honey processing with a watermelon and mossto cofermentation: 48 hours of carbonic maceration in tanks, mossto inoculated with selected yeast and combined with allulose and dehydrated watermelon, then pulped and macerated a further 72 hours at 18°C in bioreactors. Grown at 1650-1800 m. Flavour profile of cherry and strawberry lime cordial.
