Summary

Single origin Colombian coffee from Finca Betania in Palestina, Huila, produced by Maria Rodriguez, who co-leads the farm with her husband Linarco Rodriguez within a cooperative of 117 smallholder families. The SL28 variety is grown at 2000 m and processed as Honey: ripe cherries are hand picked and sorted, depulped leaving a thin even layer of mucilage on the parchment, then dried slowly on raised beds to concentrate sugars while preserving clarity. Roasted for espresso, with a flavour profile of citrus, pear and brown spice.
