
Colombia El Diviso Ombligon Espresso - Single Origin
Summary
A rare Ombligon varietal from José Uribe's El Diviso farm in Huila, Colombia. This lot undergoes a highly controlled sequential fermentation process: hand-selected cherries are oxidised for 24 hours, then fermented anaerobically for 200 hours in a bioreactor with recirculation and added microorganisms. Post-fermentation, the coffee is quenched, treated with hot water, and dried in a sealed steel dehumidifier to preserve flavour. Expect a complex cup with notes of cherry, chocolate, raspberry, and dried fruit.
