
Las Lomas
Summary
Las Lomas is a coffee from Costa Rica's West Valley region near Naranjo de Alajuela, produced by the Coopro Naranjo cooperative representing around 2,000 smallholder farmers. This small-producer blend was processed under the guidance of Bányai Speciality Coffee Concept. The cherries were washed, then soaked in a water bath inoculated with terroir wild yeasts collected from the Lourdes mountains, followed by a 60-hour anaerobic fermentation in 800-liter food-grade containers. After fermentation, the cherries were pre-dried on patios and finished on raised beds. Flavour notes include rum plum, blackcurrant, and cocoa bean.
