It is produced by about 3,200 smallholder farmers and processed at the Gargari washing station, operated by Primrose and managed by Birhanu Geda. Cherries are fermented for 12 hours after depulping, washed, then fermented again for 48-72 hours, and finally dried on raised beds for 8-12 days. Flavour notes include peach, black tea and lime.
