Summary
Frinsa Tempe from Indonesia, produced by Wildan Mustofa of Frinsa Estate in West Java's Weninggalih region at 1400m altitude. Grown from Arabica local varieties. Processed using semi-dry method with unique anaerobic fermentation: washed cherries are sealed in plastic barrels for approximately 72 hours, then inoculated with Rhizopus fungus culture (inspired by tempeh making) and covered for 36 hours before sun-drying for 7-10 days. Flavour notes include quince, pear, and butter caramel. Intended for filter brewing.
