Dhilgee Siko #1 - Etiopie
Summary
This washed coffee from the Siko washing station in the Uraga district of Guji, Ethiopia, is grown by about 500 smallholder farmers at 2,100–2,250 meters above sea level. The coffee undergoes a 24–72 hour fermentation, followed by washing, density sorting, and a six-hour soak, then slow drying for about 13 days. In the cup it is structured, clean, and notably sweet, with layers of peach, apricot jam, and orange marmalade, complemented by floral tea, cane sugar, and sweet grain, with a subtle hoppy character. The finish is long, full, and elegant.
