Dhilgee Siko #1 - Ethiopia
Summary
Dhilgee Siko #1 comes from the Siko washing station in Uraga, Guji, Ethiopia, where around 500 smallholder farmers grow coffee at 2,100–2,250 masl. This washed lot is fermented for 24–72 hours, followed by washing, density sorting and a 6-hour soak, then dried slowly for around 13 days and hand-sorted. In the cup it is structured, clean and deeply sweet, with layers of peach, apricot jam and orange marmalade, floral tea, brown sugar and sweet barley, and a subtle hop character. The finish is long, coating and elegant.
