Summary

A washed decaffeinated coffee from the Villamaría community in Caldas, Colombia, produced by 50 smallholder farming families around Villarazo. Made from the Pink Bourbon variety and decaffeinated using the EA Sugarcane method. Cherries are processed with the Water Pillow method, fermenting under vacuum for 48 hours before being pulped and dried for up to 20 days on raised beds in the sun. Roasted for filter and also suited to mild espresso, with a lively, floral and complex cup showing raspberry, mandarin, candied lime, honeysuckle and sea buckthorn.
