Summary

A Geisha coffee from Finca Deborah in Volcan, Chiriqui, Panama, produced by Jamison Savage. Grown at 1900 masl. Processed using a washed method followed by carbonic maceration in CO2-flushed tanks, using the 'Echo' technique where cascara is reintroduced during fermentation for added complexity. Tasting notes of bergamot, hibiscus, and a silky mouthfeel. Part of Assembly's 10-Year series and used by Claire Wallace to win the UK Barista Championship in 2022.
