Colombia — Cata Reserva Year 2
Summary
Single-origin Colombian coffee from Cata Reserva, grown on a 4.5-acre plot of mature Castillo trees in La Florida, Timaná, Huila, at 2000 masl. Ripe cherries undergo 2–3 days of open-tank oxidation, then pulping, followed by four days of sealed fermentation with coffee mosto and panela. The controlled fermentation develops a thorough profile while avoiding alcohol-like flavours. Sensory notes of papaya, strawberry and juicy fruit. Roasted for filter.
