Colombia Las Palmas is a single-origin coffee from Huila, Colombia, produced by Abelardo Alvear at Finca Las Palmas (1,800 masl). The coffee is of the Bourbon Aji variety and undergoes a double anaerobic fermentation process: 30-38 hours in sealed bags followed by approximately 80 hours in tanks after depulping, then patio-dried for about 21 days. It is roasted to a medium level and recommended for filter brewing methods. The tasting profile features notes of orange juice, canned peach, and bayleaf.
