Burundi Munyinya, Filter
Summary
A washed Red Bourbon filter coffee from Burundi's Gitega Province, grown at 1,700–2,100 masl and supplied by the Bukeye Washing Station. Ripe cherries are floated, hand-sorted and pulped, then given a single dry fermentation of around 12 hours, followed by traditional footing to remove mucilage, rinsing, density grading and a final soak. The parchment dries on covered tables and then African raised beds, turned and hand-sorted daily for up to 20 days, until it reaches 10.5% moisture. Medium roast with tasting notes of plum, lime and black tea.
