Burundi Munyinya, Espresso
Summary
A washed Red Bourbon espresso from Burundi's Gitega Province, grown at 1,700–2,100 masl and traded by Osito. The coffee is processed at the Bukeye Washing Station, where ripe cherries are floated, hand-sorted and pulped, then given a single dry fermentation of around 12 hours followed by traditional footing to remove mucilage. After rinsing, density grading and a final soak, the parchment dries on covered tables and African raised beds, turned and hand-sorted daily for up to 20 days until it reaches 10.5% moisture. Roasted medium, it cups with notes of plum, lime and black tea.
