Colombia La Piragua
Summary
Colombian coffee from the La Piragua farm in Palestina, Huila, produced by Arley Vargas alongside his father Alexander Vargas. The Striped Red Bourbon variety is grown at 1600-1800 masl and processed naturally, with a double fermentation: an oxidized fermentation for 72 hours followed by anaerobic fermentation in barrels with degassing valves for 98 hours, then dried in sheds over 15 to 20 days. The family measures Brix to pick at peak ripeness and applies regenerative practices. Cup profile shows cherry and mascarpone with bright, vivid acidity — juicy, layered and ideal for espresso.
