Colombia - Peach Co-ferment - Edinson Argote
Summary
A Colombian coffee from producer Edinson Argote's Quebraditas farm in the Huila region, grown at 1850m. The Caturra variety undergoes a peach and yeast co-ferment process: cherries are harvested at 90% ripeness, floated, oxidised in food-grade drums for 12 hours, pulped dry, fermented 24 hours to remove mucilage, then fermented 72 hours below 25°C with ripe peach and specific yeast, washed, mechanically dried for 42 hours at 38°C and stabilised in GrainPro bags. Juicy and fruit-forward with notes of peach rings sweets, suited to pour over, espresso, milky drinks and batch brew.
