A CM Natural coffee from Supriyanto (Iyan), grown on Mount Suket in the Ijen volcano range of East Java, Indonesia at 1700 MASL. The Java variety coffee undergoes 120 hours of anaerobic fermentation in a sealed bioreactor tank injected with carbon dioxide before natural drying, creating a process-forward profile. The cup offers notes of orange, forest fruits, molasses, raisin, cherry and a winey finish, with strong fruit character, balanced acidity and deep syrupy sweetness from the volcanic high-altitude soil.
