Summary
This coffee comes from the Shyira Washing Station in the Nyabihu District of Rwanda, grown at altitudes between 1,800 and 2,000 metres above sea level, with cherries collected from neighbouring producers farming up to 2,400 MASL. Composed entirely of Red Bourbon variety, it undergoes an anoxic natural fermentation in sealed tanks for 48 hours before being dried on raised beds for 4-5 weeks. The cup profile features notes of Medjool Date, Juniper Berry, Parma Violet, and Acacia Honey.
