Colombia Finca El Triunfo is a specialty coffee from the Huila region in Santa Maria, Colombia, produced by Nicolas and Patricia Ome on their Finca El Triunfo farm at 1,750 meters above sea level. The coffee is of the Pink Bourbon variety, which genetic research has revealed to be derived from Ethiopian landrace lines, related to varieties like Geisha. Processing is fully washed: ripe cherries are hand-picked, sorted, rested for 18 hours, fermented in water for 48 hours, washed, and slowly dried under marquesinas for about 20 days. The flavour profile features raspberry, strawberry, rose, and honey notes. The farm benefits from the rich volcanic soils of the Huila region and receives support from Cuatro Vientos exporter.
