The Castillo variety is processed using the Natural method with 25–30 days of drying on raised beds. Flavour profile features ripe banana, mango, and toffee sweetness with a smooth finish. SCA score of 86. Roasted in Warsaw for filter brewing. Best prepared using V60, Chemex, or batch brew methods.
