This Bourbon Sidra variety undergoes a multi-stage natural process including oxidation, anaerobic fermentation, and controlled drying. SCA score of 88. The profile features bloody orange, pear, and kiwi with tropical fruit complexity, pineapple, lychee, melon sweetness, and tangerine acidity. Roasted in Warsaw as a filter roast, recommended for V60, Chemex, or Aeropress brewing.
