Los Pirineos Laurina

Summary

Los Pirineos Laurina is a washed coffee from the Los Pirineos farm in the Tecapa-Chinameca region of Usulutan, El Salvador, produced by Diego Baraona. It features the rare Laurina cultivar (a mutation of Bourbon, also known as Bourbon Pointu), which naturally contains about 40% less caffeine than traditional Arabica cultivars, resulting in low bitterness. The flavour profile includes malt, caramel, and red fruits. The coffee was harvested in February 2025 and processed using the washed method: selectively picked cherries are depulped, dry-fermented overnight, washed, and slowly dried on raised beds under shade nets.
