Summary
A single-origin Geisha coffee from Finca Deborah in the Boquete Valley, Volcán region of Panama, produced by Jamison Savage. The coffee undergoes a unique Natural Nitrogen Macerated and Washed process: whole cherries are fermented in nitrogen-controlled tanks for approximately 50 hours, then washed, dried on a multi-level shaded drying system, rested in sealed bags, and finally hulled and sorted. Flavour notes include bergamot, mandarin, raspberry, cherry, and rose, with a structured acidity and long sweet finish. Suitable for both filter and espresso extractions.
